Our Jamaican Feast 2/7/09

Here is the run down on what we ate at our Jamaican Dinner.

All of the dishes were very authentic and I think we all did a great job with the theme. Everything was delicious!

Dinner started out with appetizers that the Rinker’s brought.  Hot Yam dip and Pan Fied Plantain chips.  The dip was spicy and the chips were sweet.  Nice combination of  flavors.

Next we had soup made by our own “Cheif Soup Chef”, Jim.   It  was his own Black Bean Soup recipe which fit the theme perfectly.

Then we had “Festival Rice Salad” served cold and made with rice, coconut, and cashews with a tropical orange dressing.  Sally and Bob brought the Jamaican salad.

Now came the Main Event, Our Dinner Plate of the evening and it was packed. Maureen and Mike made Coconut Fried Chicken and a Curry Shrimp dish.  Sally and Bob made a side dish, Jerk Swordfish Kabobs. Carol brought a fruit slaw and there was also a nut bread.

After we rested, we all seemed to find room for the dessert that Samantha and Brad brought.  A deliciously sweet bread pudding that topped the feast off perfectly.  With a cup of good coffee, and Maureen’s Irish Cream it was perfect!

Man that was good!

    We use to be real good with posting recipes but now since most of the time we get them from the internet they are pretty easy to find. If I get them I post them.
