Cream Of Asparagus Soup



ALL AMERICAN - Cream Of Asparagus Soup


An original recipe adapted from many other good ones.


INGREDIENTS:

  2 tablespoons butter
  1 large onion - chopped
  2 shallots - chopped
  3 to 4 cloves of garlic - chopped
  3 bunches of Fresh Asparagus - washed and chopped into pieces
  6 cups chicken of stock
  ˝ to 1 cup of light cream
  Salt and fresh cracked pepper to taste


PREPERATION:

In a large stockpot, sauté the onion, shallots, and garlic in 
butter until soft and translucent but not burned.  Add the 
Asparagus and chicken stock and cook until the Asparagus 
is soft.  After the soup has cooked use a hand blender to puree.  
Add the cream.  Salt and Pepper to taste.  Strain through 
a colander or strainer and serve hot.
