Feta Cheese Spread


Feta kai skordo meze

1/2 pound (225 gr) feta

2 cloves garlic, mashed

2 or more tablespoons olive oil 
   (enough to emulsify feta)

1/3 teaspoon oregano


Place feta in a bowl and mash well. Add the rest 
of the ingredients and mix together thoroughly or 
alternatively place all ingredients in a food 
processor and whirl on slow speed until smooth. 
Serve with crackers or slices of fresh pita 
bread.
