Annette's Gazpacho
Annette looked at a few different recipes before
creating this combination.
Gazpacho can be many different combinations
of vegetables, fruits and nuts.
Ingredients:
2 - cucumbers peeled, seeded, and cut into 1/4
inch pieces.
1 - large green bell pepper
1 - large red bell pepper
2 - large carrots
1 - medium onion
4 - cups V-8 vegetable juice cocktail
1 1/2 - cups tomato cut into 1/4 inch pieces
1/4 - cup red wine vinegar
6 - 8 leaves fresh basil and some fresh parsley
finely cut
salt and pepper to taste
dash or so of red pepper sauce (Crystal brand)

Set aside one chopped cucumber and the tomatoes.
Cut all the remaining veggies up and place into
food processor. Process well. Combine all
ingredients in a large bowl and chill for at
least one hour.
Serve with croutons, shrimp, or any other
condiment of your choosing.
