"Grilled Ginger Mahi Mahi with Fruit Salsa"
Mahi Mahi:
1/2 cup Olive Oil
3 Tablespoons Soy Sauce
3 Tablespoons Dry Sherry
2 teaspoons Fresh Ginger root
2 large Clove Garlic, Mined
1 pound Mahi Mahi Steaks (1" thick)
Mix first 5 ingredients and place in plastic
zipper bag with fish steaks.
Salsa:
1 cup strawberries, chopped
1 medium papaya, peeled, seeded, chopped
1 kiwifruit, peeled and chopped
1 starfruit, seeded, chopped
2 cups fresh pineapple, diced
Jalpeno Dressing (below)
Jalapeno Dressing
1 tablespoon chopped fresh cilantro
1 Tablespoon olive oil
1 tablespoon lime juice
1 or 2 Tablespoon honey
1 Tablespoon fresh ginger root
few jalapeno chili, seed and very finely chopped
Toss all ingredients, right before serve mixed with
Jalapeno dressing
Preheat grill. Turn down flames on grill! Remove
steaks from marinade and place on grill. When getting
ready to turn your fish steaks, Remember to brush
your fish with the remaining marinade from time to
time to add more flavor. When removed from heat,
serve salsa on the top of the fish.
