Marinated Vegetables

4 cups assorted fresh vegetables 
1/4 cup lemon juice 
1/4 cup vegetable oil 
1 tbs sugar 
1 tsp salt 
1/2 tsp oregano 
1/8 tsp pepper 

Place vegetables in plastic bag or shallow dish. Combine 
remaining ingredients, mix well. Pour over vegetables. Cover, 
marinate in refrigerator 6 hours or overnight.


Suggested Vegetables:
Cauliflowerets, carrots mushrooms, cherry tomatoes, 
brussels sprouts, broccoli, zucchini, onion & cucumber.
