Ensalda de Aquacate Y Pina
Avocado & Pinapple Salad
INGREDIENTS:
2 cups of pineapple chunks
2 large avocados, pealed and cut in slices
1 head iceberg lettuce, shredded
1 medium sweet yellow onion, sliced thin
1/3 cup cider vinegar
1/3 cup olive oil
1/3 cup apple juice
salt and pepper to taste
DIRECTIONS:
Combine vinegar, olive oil and apple juice in
a blender or food processor until smooth.
Toss all ingredients together, adding the oil and
vinegar mixture to the salad ingredients until everything
is well coated. (Adjust the amount used to your own taste.)
