RASPBERRY VINAIGRETTE SALAD
 
Green Leaf lettuce (baby spring mix)
Pignoli (pine nuts) 
Crumbled blue cheese crumble
Dried cranberries
Fresh raspberries ( seasonal)
optional fresh strawberries or pear
 
 
 
 
DRESSING:
 
1/4 c. extra virgin olive oil
1/8 c. raspberry vinegar
1/2 oz. orange juice
1/8 tsp. garlic, jar or fresh
1 tsp. raspberry jam
Salt and pepper
 
Clean lettuce and toss.  Amounts depend on the size of salad 
desired.  Top with pine nuts, cheese, dried cranberry and fruit.  
In a separate container mix the dressing ingredients and toss 
with salad immediately  and  grated loatelli cheese before serving
