Gingered Snow Peas

Ingredients
1 clove Garlic 
2 tsp sliced Ginger 
300g trimmed Snow Peas 
1/2 cup sliced Spring Onions 
2 cups sliced Mushroom (Cups/Buttons) 
3/4 cup Chicken Stock 
1 Tbsp Dry Sherry 
1 Tbsp Soy Sauce (Salt Reduced) 

Directions
Heat chicken stock and garlic and boil until reduced to 1/4 cup. 
Remove garlic. In a wok or large frypan, place reduced chicken 
stock, ginger, vegetables and sherry. Stir fry for 3-4 minutes, 
tossing frequently. Add soy sauce. Serve with steamed rice.
