Maureen's..."Spanich with Feta Cheese"
1 big bag of fresh spanich
two red sweet peppers -strip
1 or 2 gloves - Elephant Garlic
As much Feta Cheese as you want.
little olive oil
Garlic Expressions Classic Vinaigrette salad dressing ( I bought it from Zagara's )
optional...red onion
Put few handful of spanich in the big bowl
put a little olive oil on the fry pan....when hot
enough, put in red pepper and chopped garlic
and slowly cook to soften but don't over cook.
Toss everything together with dressing and
serve room temperature.
