STIR-FRIED SHRIMP WITH SCALLOPS AND VEGETABLES
6 TO 8 SERVINGS

1/2 pound shrimp
1/2 pound scallops
1/2 pound shitake mushrooms
1/4 pound snow peas
1 clove garlic
1 green pepper
1 yellow pepper
1 red pepper
1 tablespoon cornstarch
1/2 cup sugar
1/4 cup fresh shrimp stock
2 tablespoons oil
1/2 teaspoon salt
1/2 cup stock


1. Shell and devein shrimp.  Slice fresh mushrooms 
and peppers.

2. Blend cornstarch, sugar and cold stock to a paste.

3. Heat oil; add garlic and stir-fry to brown lightly.  Add 
shrimp and stir-fry 1 minute.

4. Add mushrooms and peppers; stir-fry until mushrooms 
begin to soften (about 2 minutes).

5. Stir in scallops, salt and remaining stock.  Heat quickly; 
then cook, covered,2 minutes over medium heat

6. Add snow peas; cook stirring, 1 minute more.

7. Stir cornstarch paste to thicken, and serve at once.
